Lottē is an independently owned restaurant in downtown Wichita built around thoughtful food, warm hospitality, and strong relationships with the people who make both possible.

Our food is worldly and comforting, grounded in good sourcing, technique, and the seasons. The menu changes throughout the year, shaped by what our farmers are growing, the experiences of our chefs, and the food we simply love to eat.

We take the cooking seriously. We just don't think dinner needs to feel serious.

Why Lottē

Chef and owner Josh Rathbun returned to Wichita in 2016 after years spent cooking in Denver, Australia, and kitchens across the country.

Coming home was about family, affordability, and building a more sustainable life. Over time, it also became about creating the restaurant he wanted to work in—one centered on local sourcing, seasonal cooking, strong technique, and professional opportunities for cooks, without the stiffness or pretension often associated with ambitious restaurants.

Lottē opened in October 2023 as the culmination of that idea.

Built Around People

Lottē is built as a learning kitchen.

We believe the best way to develop young cooks is to give them responsibility, coach them through the creative process, and gradually give them the confidence to create on their own.

Mentorship here goes beyond technique. It means helping people learn how to lead, communicate, make decisions, and grow into chefs with their own point of view.

The goal is not to build a kitchen where every idea comes from one person. It is to create a team capable of teaching, contributing, and pushing the restaurant forward together.

Rooted in Kansas

Many of the relationships behind Lottē existed long before the restaurant did.

Josh has worked with Jimmy Vo of Kan-Grow Hydro Farm for roughly a decade, Other regular producers include Serenity Farms, Don’s Produce Patch, Flint Hill Family Farm, Anchor Farm, Blazefork Lamb, Campo Lindo Chicken, Stroot's Locker, and Pinole Blue.

At the end of the day, the goal is simple: make thoughtful food, take care of people, and create a restaurant that feels distinctly at home in Wichita.
